Created by Berkeley, California-based chef Marla Simon, Scarlet Fire® hot sauce was inspired by her love of music and culinary background. The art on the label was created by well-known Phish poster artist Jim Pollock.


Scarlet Fire® is an approachable, medium heat hot sauce made with organic vinegar and a unique blend of Freno peppers, habanero and Thai chilies and garlic, as well as carrot for a little sweetness. All of the locally sourced ingredients are California grown and non-GMO. Scarlet Fire® hot sauce is gluten-free and vegan, has no added sugar, and is very low in sodium.

Simon, who also runs the gluten-free personal chef service Fresh Beets Kitchen, first debuted an early-stage version of Scarlet Fire® in 2011 while eating tacos with friends around a campsite at Yosemite National Park. That segued into selling out of Scarlet Fire® at a pop-up market in Denver, where Simon was teaching at a local culinary school.

The tour continued with a successful Kickstarter campaign in June 2019 that led to the first small-scale commercial batch of Scarlet Fire® being produced in February 2020. In response to the COVID-19 pandemic, plans to target stores were put on hold while Simon shifted to selling directly to consumers.
